Recipe: Braised Beet Greens and Blue Cheese

If you are a fan of flavors, this dish is for you!

You need,

the greens off of a bunch of beets, washed with large stems removed

3 cloves of garlic, chopped finely

1/4 cup of dried cherries, cranberries or raisins

balsamic vinegar, hot pepper flakes and blue cheese (goat cheese or feta are also good in this recipe) to taste

olive oil

Step 1: Sauté garlic and 1 teaspoon of hot pepper flakes in 2 teaspoons of olive oil. Use more hot pepper flakes if you like spicy food or omit if you don’t.

Step 2: add all of the beet greens and stir for a few minutes.

Step 3: When they are cooked down in size, add a tablespoon of balsamic vinegar (or more to taste) and cook for a minute more or two. Keep stirring the whole time.

Step 4: Turn off heat. Add dried fruit and cubed blue cheese

This serves two as a side dish or a makes a spectacular lunch for one.
