Farmers Market Recipe: Creamy Radish and Cucumber Salad

Radishes are a main ingredient of this week’s featured farmers market recipe

This summer, the Manchester Farmers Market has partnered with University of Michigan School of Public Health student Rachel Lowry to provide shoppers with nutritious recipes based on ingredients that can be found at the farmers market each week. In addition to the recipe, she is providing a farmers market shopping list. A packet of recipes can be picked up each week at the farmers market as well!

This week’s recipe:

Creamy Radish and Cucumber Salad

Time Cook: 10 minutes

INGREDIENTS:

  • 1 English cucumber, thinly sliced
  • 20 radishes or 2 bunches, trimmed and thinly sliced
  • 1⁄2 cup or 1 bunch chives or green onion, chopped
  • 3⁄4 cup sour cream or plain Greek yogurt
  • 3⁄4 teaspoon salt or add to taste

Directions:

  1. In a medium salad bowl combine sliced cucumbers, sliced radishes, and chopped green onion.
  2. Just before serving, add the sour cream and salt. Stir to coat vegetables in dressing.
