What is celeriac, besides an opportunity to add an unusual, locally grown vegetable to your diet? It is a root vegetable that tastes like celery, also know as celery root and knob celery. The leaves can be used in salads or as an herb, but the root is the highlight of this vegetable – called hypocotyl and is typically harvested when it is 4 – 5.5 inches in diameter. It can be cut into strips and eaten raw, or cooked by roasting, stewing, or blanching and mashing. It is good in soups and casseroles. One recipe is mashed celery root which has the added benefit of all ingredients being available right now at Acorn!

Mashed Celery Root

  • 2 pounds of celeriac
  • 2 shallots
  • 6 cloves of garlic
  • whole milk
  • 2 tablespoons of butter
  • salt and pepper to taste

Peel root and cut into cubes, chopped shallots and garlic. Combine celeriac, shallots, garlic and boil in a dutch oven about 20 min. Drain and add milk and butter. Mash with a mixer, blender or by hand. Add salt & pepper.
