Recipe: Italian Mushroom Bake
Italian Mushroom Bake
1 pound ground pork
1 jar of your favorite pasta sauce
1 ½ pounds small white mushrooms or Portobello Mushrooms (what I used)
2 cups of greens, spinach fresh or frozen, or kale
pesto
Preheat oven to 350 degrees. In a large skillet cook ground pork until done.
Add Pasta sauce.
Cook for 5 min. Add 2 cups of greens, put lid on and cook until greens are done.
While the greens are cooking remove stems from mushrooms and place in your casserole dish.
Once the greens are done pour sauce over the mushrooms. If you used Portobello mushrooms, like I did, fill each Portobello mushroom with sauce. Place in oven for 20mins.
Garnish with a dollop of pesto and parmesan cheese. Serve with a side of noodles! Enjoy
