Chocolate Cupcakes with Mint Whip Frosting
Cupcakes:
1 chocolate cake mix (Duncan Hines Dark Chocolate Fudge)
1 small package instant pudding (Jell-O cheesecake)
4 large eggs
1/2 cup vegetable oil (canola)
1 & 1/3 cup hot water
Mix oil, eggs and water until well blended. Beat in cake mix and pudding on low until just blended and then beat for 5 minutes on medium.
Bake at 350 degrees for 20 to 30 minutes or until a pick comes out clean. Cut time in half for mini-cupcakes.
Frosting:
3 & 1/2 cups chilled heavy whipping cream
6 Tablespoons sugar
1 teaspoon mint extract
Beat all ingredients together on high until stiff peaks form. Add a dash of green food coloring if desired.
