What are microgreens, anyway?

They are vegetable greens that differ from sprouts or shoots in that they are harvested shortly after the plants' true leaves have emerged.

Microgreens are often used as a nutritional supplement because they are high in potassium, iron, zinc, magnesium and copper and plant compounds, which are antioxidants.

They taste sweet and savory, and some can be spicy! Use them consumed raw in salad and instead of lettuce in sandwiches, on flatbread, or pizza. They are also great in smoothies or added when juicing vegetables. They also can also be added to soups, omelets, or frittata. Or try this simple recipe for Microgreen Salad!

Microgreen Salad

  • 1 cup microgreens
  • 1⁄2 cup grated carrots or beets
  • 1⁄2 cup of chopped apple
  • 1⁄4 cup of feta cheese
  • Optional – add 1⁄4 cup sunflower or pumpkin seeds

Drizzle with oil and vinegar dressing, or another dressing of your choice.
